1/2 cup dry lentils

1 cup low-fat chicken broth

1 pound boneless, skinless chicken breasts, cubed

1/2 teaspoon dried Italian herbs

One teaspoon minced garlic

1 (14.5 ounce) can diced tomatoes with juice

1 cup fresh spinach, shredded

Salt to taste

4 servings

Rinse the lentils and put them in a medium saucepan with the carrots and broth. Provide boil. Reduce heat and simmer until tender; about Twenty or so minutes. While that's simmering, spray a large skillet with essential olive oil cooking spray (or olive oil from a mister) and add some chicken and garlic. Sprinkle the chicken with all the herbs and cook until no longer pink. Add some tomatoes, spinach, and cooked lentil mixture to the skillet; heat through.
